The Cozy Cookie Bars That Made Saying Goodbye to Summer a Little Easier

Now that we've officially welcomed September and are trying to swallow the bitter pill of saying goodbye to summer, I think we all deserve to sweeten that transition a little.
And what better way to do that than by embracing a little extra coziness?
What does cozy mean to you?
For me, it's a warm cup of coffee, a good book, a soft throw blanket on the couch, and... yes, a delicious homemade dessert.
Let's be honest.
Who can resist a freshly baked, gooey cookie bar overflowing with melted chocolate chips?
Not my family.
As the back-to-school season approaches and life inevitably becomes busier, I'm always on the lookout for simple dessert recipes that don't require a trip to the grocery store or a kitchen full of complicated ingredients.
Ideally, the recipe must pass three important tests:
✅ Kid-approved
✅ Husband-approved
✅ Mom-approved
(The husband can be almost as picky as the children sometimes. Lucky me, right?)

Recently, I discovered this incredibly easy cookie bar recipe and immediately fell in love with it. I made a few small adjustments of my own, including swapping the all-purpose flour for brown flour to give it a slightly healthier twist.
The result?
Soft, chewy, chocolatey perfection.
The kind of dessert that disappears mysteriously within twenty-four hours.
Easy Chocolate Chip Cookie Bars
Ingredients
1½ cups whole wheat flour
½ cup brown sugar
½ cup salted butter
Semi-sweet chocolate chips (as much as your heart desires!)
1 can sweetened condensed milk
1 egg
1 teaspoon vanilla extract
Instructions
Step 1: Prepare the Crust
Preheat your oven to 350°F (175°C).
In a food processor, combine the flour, butter, and brown sugar until the mixture resembles coarse crumbs.
Mix in a handful of chocolate chips.
Press the mixture evenly into the bottom of a baking pan and bake for 15 minutes.
Step 2: Make the Filling
While the crust is baking, combine the condensed milk, egg, and vanilla extract in a food processor and blend until smooth.
Stir in additional chocolate chips.
Pour and spread the mixture evenly over the baked crust.
Step 3: Bake
Return the pan to the oven and bake for 20 to 25 minutes.
Be careful not to overbake. The bars should remain soft and slightly gooey in the center.
Step 4: Cool and Enjoy
Allow the bars to cool before slicing them into squares or bite-sized pieces.
Or, if you're anything like my family, remove one while it's still slightly warm because patience is overrated.
Serve with coffee for the adults and milk for the kids and enjoy!
A Little Mamavalues Tip
Store any leftovers in an airtight container to keep them soft and moist.
Although, if your household resembles mine, I highly doubt they'll survive long enough to dry out.
These cookie bars are simple, comforting, and wonderfully indulgent, making them the perfect little treat for cozy September afternoons.
