200–250 g dried lentils, rinsed and drained
2–3 tbsp olive oil
1 medium onion, finely chopped
2 garlic cloves, minced
1 carrot, diced
1 celery stalk, diced
1 tbsp tomato paste
2 bay leaves
1 tsp ground turmeric
1 tsp ground cumin
1 tsp curry powder
1 tsp smoked paprika
½ tsp ground ginger
4–5 cups chicken stock (or vegetable stock for a vegetarian version)
Salt & pepper, to taste

Once it starts boiling, reduce the heat to low and let it simmer slowly for about 40–45 minutes, or until the lentils are soft and tender.
If the soup thickens too much during cooking, feel free to add a bit of water to maintain that perfect soupy consistency.
