Greek Orange Pie

This pie makes up to 12 servings and can be stored in the fridge for 3 to 4 days. Extra tip: It's the perfect companion to your afternoon coffee when you're craving something sweet. I promise your children and guests will love it. So, let's get started!
Ingredients
SYRUP
500g granulated sugar
450g water
1 stick cinnamon

CAKE
4 eggs
450g filo pastry
230g vegetable oil
3 oranges zested and juiced (about 150g)
300g greek yogurt
250g granulated sugar
30g baking powder
Method
step 1
Dry the filo sheets in room temperature for 2 hours, then crumble them and set aside.

Prepare the syrup in advance, as it must be cold once the cake is ready. Slowly heat all the ingredients in a pan to dissolve the sugar, then boil briefly, for about 1 to 2 minutes. Let it cool.

Preheat the oven to 350F/180C. Mix the rest of the cake ingredients in a large bowl and whisk well, to dissolve the sugar. Then add the filo sheets crumbles and mix well, until you get a homogeneous mixture.

Butter a cake tin and pour the mixture in it. Put into the bottom of the oven and bake for 35-40 minutes or until the cake has a beautiful orange – golden color. To ensure is ready, poke a skewer in the cake, until it comes out clean.

Pour over the cold syrup, while the cake is still hot. Prick holes all over the top of the cake with a skewer to help absorb the syrup. Let aside to cool and serve!
