Homemade Strawberry Ice Cream (The Simple Kind You’ll Make Again and Again)

There are certain recipes that don’t come from cookbooks or careful planning.

They appear quietly, almost unexpectedly — on warm afternoons, in kitchens filled with sunlight, when you want to create something sweet without turning it into a complicated project.

This homemade strawberry ice cream is exactly that kind of recipe.

No machines, no stress, no perfection required. Just a few simple ingredients, a bowl, and a moment of intention.

Because sometimes, especially in the middle of busy days and endless responsibilities, making something soft, sweet, and homemade feels like a small act of care — for your family, and for yourself!

And strawberries… they have a way of turning everything into summer, don’t they?



 Ingredients

  • 2 cups fresh strawberries, washed and hulled

  • 1 cup heavy cream

  • 1/2 cup sweetened condensed milk

  • 1–2 tablespoons honey (adjust to taste)

  • 1 teaspoon vanilla extract

  • A squeeze of lemon juice


Instructions

  1. Prepare the strawberries

    Mash the strawberries gently with a fork or blend them lightly if you prefer a smoother texture.

    Add a small squeeze of lemon juice to brighten the flavor.

  2. Whip the cream

    In a large bowl, whip the heavy cream until soft peaks form.

    Nothing too stiff — just soft and airy.

  3. Combine gently

    Add the condensed milk, honey, and vanilla extract to the whipped cream.

    Mix slowly and carefully, keeping the mixture light.

  4. Add the strawberries

    Fold the strawberries into the cream mixture.

    Leave some texture — it makes every spoonful more interesting.

  5. Freeze

    Transfer the mixture to a container, smooth the top, and freeze for at least 5–6 hours, or overnight.


To Serve

Let it sit at room temperature for a few minutes before scooping.

Serve in small bowls, or even better:

  • with fresh strawberries

  • a drizzle of honey

  • or simply on its own, slowly melting on a warm day


This is not the perfect, perfectly shaped ice cream you see in stores.

It’s softer. A little more rustic. A little more real.

And maybe that’s what makes it special.
