Moroccan Chicken with Macaroni – A One-Pot Wonder for Busy Mamas!

Hey there, lovely mamas!

 

If your weeknights are anything like mine—busy, bustling, and full of hungry little (and bigger) mouths—then you’re going to love this recipe. I actually learned it from my husband and it has quickly become a family favorite. Why? Because it’s cozy, flavorful, and comes together in one pot. Yes. ONE!!!


This dish is a beautiful fusion of comforting pasta and the warm, aromatic spices of Morocco. It’s kid-approved (even by my picky toddler!) and, most importantly, parent-approved—because we get to enjoy a rich, flavorful family dinner with minimal effort. And yes, it all comes together in just one pot. Did I mention that already? Well, that’s the exciting part!

 What You’ll Need:

  • 1 onion, finely chopped

  • 2–3 garlic cloves, minced

  • 4–6 chicken thighs or drumsticks (bone-in for extra flavor!)

  • A handful of fresh coriander (cilantro), chopped

  • 2–3 tbsp olive oil

  • Salt & pepper to taste

  • 1 tsp turmeric

  • 1 tsp ground ginger

  • 2 cups chicken broth

  • 400–500g macaroni (or any short pasta you love)

 

 Let’s Get Cooking!

  1. Sauté the Goodness

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until soft and fragrant—your kitchen will already smell amazing!


  2. Spice It Up

    Add the chicken pieces to the pot. Season with salt, pepper, turmeric, and ginger. Brown the chicken on all sides to lock in those flavors.


  3. Simmer to Perfection

    Pour in the chicken broth and bring everything to a gentle boil. Cover and let it simmer for about 25–30 minutes, until the chicken is tender and juicy.


  4. Macaroni Time!

    Add the macaroni straight into the pot with the chicken and broth. Stir well, cover again, and cook for another 10–12 minutes, or until the pasta is perfectly al dente.


  5. Finish with Freshness

    Sprinkle in the chopped coriander, give it a final stir, and serve it up hot!


💡 Mama Tips:

  • Want it spicy? Add a pinch of cayenne or a chopped chili.

  • No coriander? Parsley works great too.

  • Leftovers?  Perfect for lunchboxes the next day—just heat and eat!
