My Best Tagine Improvisation Yet : Quail Tagine with Vegetables and Rice with Prunes & Raisins

One of the things I love most about cooking is that I rarely follow a recipe from beginning to end.

Over the years, my kitchen has become a meeting point between my Greek roots and Moroccan family influences. I often find myself opening the fridge, gathering whatever ingredients I have on hand, and trusting inspiration to do the rest.

And more often than not, the result is surprisingly delicious.


You've probably noticed by now that I have a special affection for cooking in a tagine. There is something magical about placing all the ingredients together, covering them, and letting them cook slowly as the flavors, aromas, and textures blend into something entirely new.

And then comes my favorite part: placing the tagine in the middle of the table and watching everyone help themselves. There is something incredibly warm and comforting about sharing a meal this way.


Yesterday's culinary improvisation was such a success that I simply had to share it with you.

The best part? You don't need a tagine to make it. A regular pot will work beautifully.


Quail Tagine with Vegetables and Rice with Prunes & Raisins



Ingredients for the Tagine

  • 6 quails

  • 1 onion, finely chopped

  • 2 garlic cloves, minced

  • A handful of fresh coriander, chopped

  • About 500 g pumpkin, peeled and cut into chunks

  • 1 sweet potato, sliced

  • 2 zucchinis, sliced

  • Salt and pepper

  • Extra virgin olive oil

  • 1 tablespoon butter

  • 1 teaspoon turmeric

  • ½ teaspoon ground ginger

  • ½ chicken stock cube

  • A little water

Preparation

Place the quails in the tagine or a large heavy-bottomed pot.

Add the onion, garlic, coriander, olive oil, butter, turmeric, ginger, stock cube, salt and pepper. Mix well to coat the meat with all the flavors.

Arrange the pumpkin, sweet potato and zucchini on top.

Add a little water to prevent the ingredients from sticking to the bottom and cook gently over low heat.

Allow everything to simmer slowly, adding a little water from time to time if necessary.

Once the vegetables are tender and the quails are fully cooked, the dish is ready. Make sure there is plenty of sauce left at the bottom because it is absolutely delicious served with the rice.


Rice with Prunes and Raisins

Ingredients

  • 2 cups rice

  • 4 cups chicken stock or water

  • Olive oil

  • 1 tablespoon butter

  • 1 cup dried prunes, chopped

  • 1 cup raisins

  • 1 teaspoon cinnamon

  • Salt and pepper

  • 1 onion, finely chopped

Preparation

Heat the olive oil and butter in a saucepan.

Add the onion and cook over medium heat until soft and translucent.

Add the rice and stir for about 2 minutes.

Pour in the stock (or water), then add the chopped prunes, raisins, cinnamon, salt and pepper.

Bring to a boil, reduce the heat to low, cover, and cook for approximately 10 minutes, or until the rice is tender and fluffy.

Serve alongside the tagine and generously spoon the sauce over everything.
