Soufflé Macaroni with Sausages: When Comfort Food Saves the Day (and Your Sanity)

Let’s be honest, mamas. There are days when the fridge stares back at you like a passive-aggressive frenemy, and your brain—bless it—is too fried to invent another quinoa-spinach-avocado miracle. You want to be the wholesome kitchen goddess, but sometimes… you just want peace. And carbs.


Yesterday was one of those days.

After spending (the day before) my precious free time crafting a gourmet salmon-lentil salad with vinaigrette (yes, I tried), my family greeted it with a collective “Bluh…”—a sound that haunts my culinary dreams. Not only did they reject the taste, but they also ignored the effort. I could’ve served them gold-plated nuggets and they’d still ask for toast.


So yesterday, I did what any tired, loving, slightly rebellious mom would do: I reached for my secret weapon. The dish that never fails. The one that brings smiles, silence, and second servings.

Is it the healthiest? No.

Is it the happiest? Absolutely.

As the ancient Greeks wisely said: “Μέτρον ἄριστον”—moderation is best.

This dish is a crowd-pleaser for kids and adults. I’ve served it at buffet dinners, and it’s always the first to disappear. It’s creamy, cheesy, cozy, and ridiculously easy to make. Even if your cooking skills are somewhere between “toast technician” and “microwave magician,” you’ve got this.


  Ingredients:

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 2 bell peppers, sliced (I used red & orange—go wild!)

  • 4–5 frankfurter sausages (chicken or pork), chopped

  • 1 tbsp tomato paste

  • 200 ml tomato passata

  • A splash of chicken broth

  • 100 ml cooking cream

  • Salt & pepper to taste

  • Grated mozzarella (as much as your soul needs)

  • 500 g macaroni

 

  Preparation:

  1. Caramelize the onion with a teaspoon of sugar until golden and sweet. Add garlic and tomato paste—stir like you mean it.

  2. Toss in the peppers and sausages. Sauté for 2 more minutes (your kitchen will smell amazing).

  3. Add the tomato passata and chicken broth. Season with salt and pepper. Let it simmer for 20 minutes on medium heat.

  4. Once the sauce thickens, turn off the heat and stir in the cream. Hello, silky goodness.

  5. Boil the macaroni—but shave off 1–2 minutes from the package instructions. We want them al dente and ready to soak up the love.

  6. Drain the pasta and mix it with the sauce.

  7. Pour everything into a deep oven-safe dish. Sprinkle generously with mozzarella.

  8. Bake in a preheated oven at 350°F (180°C) until the cheese melts and bubbles like a cozy hug.

  9. Serve hot. Serve happy.

 

Yesterday, this dish was my savior. No grumpy faces. No mysterious “ew” noises. Just pure joy, cheesy smiles, and forks clinking in harmony.

Because sometimes, the best kind of love is served with pasta, sausages, and melted cheese.

And if you want to save your soul, add a greenery (like chopped lettuce) on the side! 😉
