Meal Prep Heroes… and My Tuna-Salad Lifeline

Hey there mamas!
If any of you are prepping lunches for the week ahead, first of all: I admire you. Deeply. You are the real MVPs of domestic organization. Me? I’ve never managed to do that. Cooking for me depends entirely on the day’s inspiration—like a diva who only sings when the mood strikes. Which, I admit, is neither time-efficient nor cost-effective. So, no, I don’t recommend my method unless you enjoy living on the edge of “What’s for dinner?” panic.
But here’s the good news: I do have a little trick up my sleeve. A recipe that has saved me countless times from culinary chaos. My tuna-salad spread. It’s quick (literally two minutes), stays fresh in the fridge for 4–5 days, and works in multiple ways. Breakfast? Lunch? Dinner? Emergency midnight snack while binge-watching a series? Check, check, and check.

I came up with this version years ago after many improvisations, and it has never failed me. Plus, it’s flexible—meaning you can adjust the quantities to your taste. More or less mayo? Skip it entirely? Swap parsley for dill? Go wild. This recipe is your canvas.
Ingredients
400–500 g plain Greek yogurt
150 g mayonnaise
1–2 tablespoons mustard
1 tablespoon extra virgin olive oil
200 g canned tuna
4–5 fresh green onions, chopped
Fresh parsley, chopped
2 tablespoons capers
1 tablespoon smoked paprika
Salt and pepper to taste
Preparation
Like most of my recipes, this one is gloriously simple: throw everything into a deep bowl and mix well. Done! Taste and adjust until it suits you. Cover with plastic wrap and pop it in the fridge. The best part? It gets better every day as the flavors mingle like old friends at a reunion.
How to Use It (a.k.a. Why You’ll Love It)
Spread on bread or crackers for breakfast or a quick snack
As a side dish for lunch or dinner
On a buffet table or at a dinner party
As a sandwich filling—perfect for kids’ lunch boxes
Or just eat it plain. Yes, it’s that good.
And… my guilty pleasure: as a dip for chips I “borrow” from my kids after they fall asleep. (Shhh, that stays between us.)
